Lent has started so fish or non-meat meals are in order on
Fridays. Yesterday we had Salmon. The fillets were huge so there was leftovers.
One of our favorite ways to east Salmon is in scrambled eggs so leftover Salmon is never a problem.
First I browned chopped onions and the Salmon in a little
olive oil.
Then I added the eggs. And the tip going around on FB about
adding a ¼ tsp of cornstarch to each egg before you beat them works. This does
make for fluffy scrambled eggs. But the next time I will mix the cornstarch
with a little of the milk before I add to the eggs. Took a bit of beating to
get the lumps out.
And in a matter of minutes, dinner is served.
So the next time you have leftover Salmon or any other meat,
try this it is easy, fast and delicious.
